WOMEN IN AGRIC DEVELOPMENT SECTOR - PROCESSING OF ORANGE FLESHED POTATOES INTO GARI (1ST QUARTER)

Five (5) cassava processors were trained in the processing of orange fleshed sweet potato- cassava composite gari on 22nd February, 2024. The participants comprise of three (3) females and two (2) male. The venue for the training was at Wurakese. The objective is to help enhance broad utilization of sweet potato which will be of economic benefit to the municipality, while encouraging many farmers to go into its cultivation. Orange flesh Sweet potato has a great potential to improve health and wealth in the Municipality.

The cassava used for gari is devoid of vitamin A but have a significant amount of carbohydrate. Orange Fleshed Sweet Potato has enormous health benefits, including, vitamin A, that can fight stunting and reduce vitamin A deficiency among vulnerable populations, especially young children and lactating mothers. It has the ability to help gain weight and boost immunity. It also helps ease digestion and treats bronchitis, arthritis and stomach ulcers. It is mainly used as baby foods due to its properties as an all in one food benefits.
